Cheddar Potatoe Soup


  • dollop or so of butter
  • 1 med onion
  • 4 cloves garlic
  • 2 stalks celery
  • 3 med potatoes
  • 1 mild italian sausage
  • 2 tbls flour
  • 2 cups milk
  • 1/2 cup chicken broth in water (more chicken broth though)
  • 1.5 inch of cheddar cheese shredded
  • salt
  • pepper
  • oregano (a little)


warm butter med high, add onion, stir, add garlic and celery stir, add flour stir in - then consistently stir in the milk, when all milk is in you should have a moderatly thick soup, add potatoes, stir, add cheese stir, add sausage stir, let sit on simmer for a bit - then take sausage out, cut up and fry in olive oil in pan.  put sausage back into soup and serve - delicious!
